How Do You Stack Up?

We are frequently asked how a particular operation compares to its peer group. Well here is a chance to do your own comparisons.
 
Click on the links below to see a standard restaurant profit and loss and accompanying operating information statement which shows operating results as a percentage of total income. These results are for the years ending December 31, 2008, 2007 and 2006 and are a summary of financial statements prepared by Collard & Sowizral, PC. We have not included information from outside sources. They are accurate percentages that you can use for your business. The restaurants used to compile this information serve food and at least beer and wine and most also serve liquor. All are independent operators. Total revenue of the underlying restaurants is approximately $85m in 2008 and 2007 and $75m in 2006. All percentages are a percentage of total sales except the percentages shown in the cost of sales area which are a percentage of the related sales category. 
 
Other notes:
a)       "Beverages" sales represent combined alcoholic beverage sales as some restaurants do not separate alcohol sales by type. All non-alcoholic beverages are included with food sales.
b)       Not all restaurants have all the line items shown so you will need to combine or eliminate items accordingly when comparing to your operations.
c)       Management fees have been combined with payroll.
d)       Certain items have been reclassified for comparative purposes.
